- Salt & pepper to taste


- 4 cups chicken broth


- Zest and juice of 1 fresh lemon


- 1/2 cup dried oven tomatoes


- 2 cups fresh spinach, loosely packed


Instructions:

1. In a large saucepan, heat the olive oil over medium heat. Add the shallot and garlic, cooking until soft, about 5 minutes.
