Swiss Chard Wraps: A Family Tradition Reimagined


When I think of Swiss Chard Wraps, I am instantly transported back to lazy Sunday afternoons at my grandmother's house. Her kitchen was always a riot of colors and aromas, a place where the ordinary transformed into the extraordinary. As a child, I would watch her nimble fingers work their magic, turning simple ingredients into a feast fit for kings. Ingredients:


- Dried Swiss chard leaves


- Orange cauliflower

- Trader Joe's Spicy Peanut Vinaigrette


Instructions:


1. Prepare the Swiss Chard: Start by chopping off the stems of the Swiss chard at the point where they meet the leaf. You can stem the Swiss chard entirely, but leaving a bit of stem with the leaves gives better structure to the wraps.
2. Create Cauliflower Rice: Chop the orange cauliflower into small pieces and pulse them in a food processor until they resemble rice. I like using the cauliflower florets and the stalk together for added texture.
3. Sauté the Cauliflower: Heat olive oil in a sauté pan over medium-high heat. Once hot, add garlic and fry for about a minute or two until it starts to brown. Add the pulsed cauliflower rice and cook for 2-3 minutes until it turns a vibrant yellow-orange. Stir in a pinch of salt and chopped basil.
4. Prepare the Zucchini: Spiralize the zucchini using Blade B to create zucchini noodles. If a spiralizer isn't handy, use a vegetable peeler to make ribbons.
5. Assemble the Wraps: Lay a large Swiss chard leaf flat. Place a bit of sautéed cauliflower, zucchini noodles, red pepper, and avocado along the Swiss chard stalk. Drizzle a touch of spicy peanut vinaigrette over the vegetables and wrap everything up snugly.
6. Serve and Enjoy: These wraps are best served fresh, making them a perfect appetizer or light main dish. Consider pairing them with your favorite protein for a complete meal. For an added kick, dip these wraps in extra sauce.
