- 3 cups water
- 1 1/2 cups rice
- Pinch of kosher salt
- 1/4 cup scallions, chopped
- 2 tablespoons fresh ginger, grated
- 1/4 cup sweetened shredded coconut
- 2 tablespoons parsley, chopped
Instructions
1. Marinate the Chicken:
In a large bowl or flat dish, combine soy sauce, vinegar, garlic, peppercorns, brown sugar, and bay leaves. Add chicken thighs, ensuring they are well-coated. Cover and marinate in the fridge for at least an hour, or for a more intense flavor, overnight.
2. Cook the Chicken:
Heat grapeseed oil in a large pan over medium-high heat. Add marinated chicken thighs, skin-side down, and brown for 2-3 minutes on each side. Once browned, remove from the pan and set aside.
3. Prepare the Sauce:
Pour the marinade and chicken broth into the pan and bring to a boil. Return the chicken to the pan, cover, and simmer for 10 minutes.
4. Thicken the Sauce:
In a small bowl, whisk together cornstarch and water. Stir into the pan and turn the chicken pieces over. Cover and cook for another 6-9 minutes, until the chicken is cooked through and the sauce thickens.
5. Cook the Rice:
Bring 3 cups of water to a boil in a separate pot. Add a pinch of salt, then stir in the rice. Cook according to package instructions. Once done, fluff the rice with a fork and toss with scallions, parsley, ginger, and shredded coconut.
6. Serve:
