Growing up, my grandma always made the most delicious gingerbread cookies during the holiday season. They were soft, spicy, and just the right amount of sweet. One year, she decided to get creative and make gingerbread mummies for Halloween. They were a hit with the whole family and became a new tradition for us.
The process of making the gingerbread mummies was always a fun one. My grandma would have all the ingredients laid out on the kitchen counter, and my sister and I would take turns helping her mix the dough and cut out the shapes. We would laugh and chat as we decorated each mummy with icing, making silly faces and designs.
The smell of gingerbread baking in the oven always brought back memories of those special times spent with my grandma and sister in the kitchen. It's amazing how a simple recipe can hold so much nostalgia and warmth.

Recipe Name: Gingerbread Mummies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup molasses
- 1 large egg
- 1 tablespoon balsamic vinegar
- 5 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons whole milk
Instructions:
1. In a bowl of an electric mixer, beat the butter until light and fluffy.
2. In a separate small bowl, whisk together the flour, baking powder, ground ginger, baking soda, cinnamon, cloves, nutmeg and salt. Set aside.
3. Add the sugar to the butter and beat until light and fluffy.
4. Turn the mixer to low and mix in the molasses, egg and balsamic vinegar.
5. Slowly add the dry ingredients to the bowl and continue mixing until thoroughly combined.
6. Cover and chill about 2 hours or until the dough is easy to handle.
7. Preheat oven to 400 degrees.
8. Divide the dough in half and turn out onto a lightly floured surface.
9. Roll each half of the dough to 1/4" thickness adding flour as needed.
10. Using cookie cutters, cut dough into shapes and place on a baking sheet lined with parchment approximately 1" apart.
11. Bake in a 400 degree oven for 5-6 minutes.
12. Cool on baking sheets for one minute and move to a wire rack.
13. In a small bowl, combine the powdered sugar, vanilla and milk. Whisk to combine.
14. Spoon mixture into a pastry bag or zip top bag and snip off the tip.
15. Add two small dots of icing where the eyes should be and then press one eye on each dot.
16. Decorate the mummies using a zig-zag pattern across the surface of the cookie and allow to dry for 2-4 hours or overnight.
17. Store in an airtight container.
