- Cream of tartar


- 3 large eggs, separated

2. Sugar & Eggs: Set aside 2 tablespoons of sugar. Separate the eggs, placing the yolks in a large mixing bowl and the whites in a separate bowl (preferably plastic or metal).
3. Cream the Butter: Cream the butter with the remaining sugar until fluffy. Beat in the yolks one at a time until well blended.
4. Add Flavors: Mix in the vanilla extract and lemon zest. Add the flour and salt, mixing just until combined.
5. Liquid Ingredients: With the mixer on low, gradually add the milk and lemon juice. The mixture will be quite liquid.
6. Whip the Whites: Using clean beaters, beat the egg whites with the cream of tartar until foamy. Gradually add the reserved 2 tablespoons of sugar, continuing to beat until stiff peaks form.

8. Fill & Bake: Ladle the mixture into the prepared ramekins, filling almost to the top. Place the ramekins in a large baking pan, adding hot water to the pan until it reaches halfway up the sides of the ramekins.
9. Bake: Carefully place the baking pan in the oven and bake for 40-45 minutes until the tops are puffed and golden brown.
10. Cool & Serve: Remove from the oven, carefully taking the ramekins out of the water bath. Let them cool slightly before serving. Sprinkle with powdered sugar or add a dollop of whipped cream for an extra touch.
