You know the kind of day — a little bit drizzly, and the idea of a fragrant loaf filling the house with warmth seemed like the perfect antidote. I remembered some strawberries and a lonely lemon hanging out in the crisper drawer, and an idea sparked. This Lemon and Strawberry Loaf is a twist on your usual bake — think sweet strawberries mingling with zesty lemon and a hint of coconut. Just wrap it up snugly in plastic wrap and pop it in a ziplock bag. A tip if you’re in a rush: you can microwave slices directly from frozen — it’s like bringing back freshly baked magic!

  • Be careful not to overmix the batter once you’ve added the flour. Overmixing can make the loaf dense instead of light and fluffy.
  • For the strawberries, smaller pieces work best. They distribute better through the loaf, giving you a little strawberry burst in each bite.
