Instructions
1. Preheat the Oven: Set your oven to 350°F (175°C).
2. Cook the Pasta: Fill a medium stockpot with water and place over high heat. Once boiling, add 2 tablespoons of kosher salt, then the pasta. Stir well to prevent sticking, and cook for 8-10 minutes. Let it sit in the water briefly before transferring to a large glass or heatproof bowl.
3. Prepare the Mixture: While the pasta cools, combine coconut milk, coconut creamer, pineapple chunks, sugar, xylitol, cinnamon, nutmeg, and sunflower oil in a bowl. Mix well. Add egg yolks and stir to combine thoroughly.
4. Assemble the Kugel: Line 2 cupcake pans with cupcake liners. Use a dry 1/4 cup measuring spoon to fill each liner with the noodle mixture, topping over the rim. Add any remaining liquid to the kugels that appear dry.
5. Add the Crumble: Prepare a crumble with margarine and rice flour. Sprinkle about 1/2 teaspoon over each kugel.
