Crispy Tiger Prawns with Honey and Garlic Sauce

*Ingredients:*


- 500g tiger prawns, peeled and deveined


- 2 tablespoons cornflour


- 1/4 cup water


- 2 tablespoons light soy sauce


- 1 egg yolk


- 1 teaspoon sesame oil


- Vegetable oil, for frying


- 1 spring onion, finely chopped (for garnish)


*For the Honey & Garlic Sauce:*


- 3 tablespoons honey


- 2 tablespoons dry shao hsing wine


- 4 diced garlic cloves


- 2 tablespoons light soy sauce

Instructions:
1. Prepare the Prawns: In a large bowl, blend the cornflour and water until dissolved. Add the prawns, soy sauce, egg yolk, and sesame oil, mixing well to ensure the prawns are evenly coated.
2. Make the Honey & Garlic Sauce: In a separate bowl, combine all the sauce ingredients and set aside.
3. Fry the Prawns: Heat vegetable oil in a wok over high heat until the surface shimmers. Carefully deep-fry half of the prawns for about 1 minute, or until they turn golden brown. Remove with a slotted spoon and drain on kitchen paper. Repeat with the remaining prawns.
4. Prepare the Sauce: Drain the oil from the wok, saving it for future use if desired. Wipe the wok clean with kitchen paper. Heat the wok over moderate heat and add the honey & garlic sauce mixture. Simmer for about 1 minute.
