  • Kosher salt
  • Enjoy Life brand chocolate chips
  • Coconut yogurt
  • Tapioca flour

How to Make Pumpkin Pecan Streusel Cake – gluten free, soy free, vegan

  1. Start by making the streusel. Combine the flours, brown sugar, cinnamon, and kosher salt in a small bowl. Gently work the Earth Balance spread into the mix with your hands until you get coarse crumbs. Toss in the pecans and give it a good stir. Set this mixture aside.
  2. For the batter, measure your coconut milk and add the apple cider vinegar. Don’t stir, just let it transform into a sour-cream-like concoction.
  3. In a separate medium bowl, sift or whisk together your flours, baking powder, baking soda, cinnamon, ginger, nutmeg, and kosher salt.
